Lemon and poppy seeds cupcakes

Today, I’ve baked cupackes with two of my favourite ingredients – lemon and poppy seeds – seriously, I think these two are a perfect a match!

So this is is what I´ve used:
1 1/2 cups of flour
1/2 tsp baking powder
1/4 tsp salt
2/3 cups of brown sugar
1/2 cup vegan mayo
1 cup water
1/2 lemon (juice and zest)
1TBSP poppy seeds

Mix the first 4 ingredients; in a different bowl mix the last 4, and add together. Bake in a preaheated 180ºC/ 350º F for 20 to 25 minutes!

  1. My daughter was just asking for lemon and poppyseed muffins the other day and here I find your recipe. I am intrigued by the addition of vegan mayo, must try.

      Hi there! Usually don’t make it – I buy it! But you can make it by adding about 1/2 cup of non-dairy milk, 1/2 tsp salt, 1 tsp mustard (powder), 2 tsp agave, 2 tsp apple cider vineager and 1 cup of oil (canola, sunflower, what ever)! Enjoy!
